My kids range in ages from 5 to 13. Even though I am at home during the day it is still very hard to come up with meal ideas. Especially something that is different or something that has at least 1 thing everyone eats. It is really hard. Sometimes I want something that is just quick to cook. One of the problems I have is a find a good recipe that is quick or really good but I lose it. So i figured it would be a good ideas to post the recipes that i find. Maybe someone else could use them too.

The recipes I post I get from a variety of different resources including books and the internet. I hoping this will help me and others with various menu ideas. Just imagine if you plan the meals ahead of time, you will have time for other things.

Baked Tomato Melts

Prep: 15 minutes
Bake: 15 minutes
Servings: 4

3 large tomatos or a variety of smaller tomatoes
1 cup shredded monterey jack cheese (4oz)
1 small sweet pepper, finely chopped (about 1/2 cu)
1/4 cup sliced almonds, toasted

Preheat oven to 350 degrees.
