Cheesy Potatoes

Servings: 8

1 bag (20 ounces) frozen seasoned hash brown potatoes
1 can cream of chicken soup
2/3 cup sour cream
1 cup grated cheddar cheese


Preheat oven to 375 degrees. In a bowl, combine all ingredients. Transfer to a greased 9x13 inch pan. Bake about 1 hour or until bubbly and golden on top.

Cheesy Baked Corn Pudding

Servings: 4-6

1 can cream of celery soup
1/2 cup milk
1/2 sour cream
3 large eggs
2 cups fresh or thawed frozen corn
1/2 cup cornmeal
1 cup grated white cheese*
1/4 grated parmesan cheese
2 tablespoons thinly sliced green onion(optional)

Preheat oven to 350 degrees. In a blender, blend soup, milk, sour cream, and eggs until smooth. Pour into an 8x8 inch baking pan that has been sprayed with nonstick cooking spray. Stir in corn, cornmeal, cheese and onion. Bake 40-45 minutes or until firm in center and lightly brown on top.

* Any mild firm white cheese such as mozzarella, monterey jack, provolone or baby swiss will work.

French Onion Mushroom Rice

Servings: 4

1 cup uncooked long grain rice
1/4 butter, melted
1 can French onion soup
1 can beef broth
1 teaspoon minced garlic
1 can sliced mushrooms, drained


Preheat oven to 350 degrees. In a bowl, combine rice and butter. Stir in soup, broth, garlic, and mushrooms. Spread rice mixture into a greased 8x8 inch pan. Cover with foil and then bake 60 minutes.
Makes 4 servings.

Baked Pepperoni Dip

Servings: 6-8

1/2 pound pepperoni, cubed
1 can cream of celery soup*
1 package(8 ounces) cream cheese, softened

Preheat oven to 350 degrees. In a greased 8x8 inch baking pan, combine pepperoni, soup and cream cheese. Bake 25 minutes, or until light brown and bubbly. Serve with breadsticks or mini bagel halves.

*Cream of chicken or cream of mushroom soup can be substituted

Cinnamon Snails

Start to finish: 25 minutes

Nonstick cooking spray
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 cup finely chopped nuts
1 8-ounce package refrigerated breadsticks(8)

Preheat oven to 375 degrees. Coat a baking sheet with nonstick spray. Combine sugar, cinnamon, and nuts. Sprinkle sugar mixture on a rolling surface. Unroll 1 breadstick. Coil tightly. Wrap another breadstick around coil, forming a larger coil. Roll to 1/8 inch thickness. Place sugared side up on baking sheet. Repeat with remaining 6 breadsticks. Bake for about 15 minutes or until golden. Serve warm.

Praline Baked Apples

Prep: 20 minutes
Bake: 30 minutes
Servings: 4

1/2 cup apple juice
1/4 teaspoon ground cinnamon
4 small red baking apples
1/4 cup pecans or walnuts, coarsely chopped
1/4 cup packed brown sugar


1. Preheat oven to 350 degrees.In a small bowl combine apple juice and 1/8 teaspoon of the cinnamon. Divide mixture among four 6-ounce custard cups. Core apples; remove peel for the top of each. Place apples in prepared custard cups.
2. Place custard cups in a shallow baking pan. Combine nuts, brown sugar, and remaining cinnamon. Sprinkle over apples. Bake, covered, for 30 to 40 minutes or until apples are tender.

Broccoli Corn Bread

Prep: 10 minutes
Bake: 30 minutes
Servings: 16

1 8 1/2 ounce package corn muffin mix
3 eggs
2 cups shredded cheddar cheese (8oz)
1 10 ounce package frozen chopped brocooli, thawed and well drained

Preheat oven to 350 degrees.In a large bowl combine corn muffin mix and eggs. Stir in remaining ingredients. Spoon into a greased 9x9x2 inch baking pan. Bake for 30 minutes or until a toothpick inserted near the center comes out clean. Serve warm

Bacon Cheeseburgers

Prep: 15 minutes
Broil: 11 minutes
Servings: 4

1 1/4 pounds lean ground beef
8 thin slices cheddar cheese (4 oz)
4 slices bacon, crisp-cooked and crumbled
4 hamburger buns, split and toasted
1/4 cup french onion dip

1. Shape ground beef into 8 1/4 inch patties. Place 1 cheese slice on each of 4 patties; sprinkle with crumbled bacon. Top with remaining patties; seal edges well.
2. Place patties on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat turning once. Place remaining 4 cheese slices on top of patties. Broil for 1 minute more.
3. Spread onion dip on the toasted hamburger buns. Serve burgers on buns.

Introduction

I am a stay at home mom of 4 picky eaters. My kids range in ages from 5 to 13. Even though I am at home during the day it is still very hard to come up with meal ideas. Especially something that is different or something that has at least 1 thing everyone eats. It is really hard. Sometimes I want something that is just quick to cook. One of the problems I have is a find a good recipe that is quick or really good but I lose it. So i figured it would be a good ideas to post the recipes that i find. Maybe someone else could use them too.

The recipes I post I get from a variety of different resources including books and the internet. I hoping this will help me and others with various menu ideas. Just imagine if you plan the meals ahead of time, you will have time for other things.

Baked Tomato Melts

Prep: 15 minutes
Bake: 15 minutes
Servings: 4

3 large tomatos or a variety of smaller tomatoes
1 cup shredded monterey jack cheese (4oz)
1 small sweet pepper, finely chopped (about 1/2 cu)
1/4 cup sliced almonds, toasted


Preheat oven to 350 degrees. Cut each tomato into frour 1/2 inche slices. If using smaller tomatoes, cut each one in half. For each of 4 servings, arrange 3 tomato slices, overlapping slightly, on a foil-lined baking pan or cookie sheet. Sprinkle remaining ingrediants evenly on tomatoes. Bake for 15 minutes or until cheese is bubbly.
